Lemon cheesecake

  • 126 g graham cracker or digestive crumbs
  • 90 mL cocount oil, melted
  • 50 g sugar


  • 500 g low-fat cottage cheese
  • 200 g Greek yogurt
  • 2 large eggs
  • 75 g sugar
  • 5 g flour
  • 2.5 mL vanilla
  • Lemon zest, for garnish


1.Preheat oven to 177°C.

2.In a small bowl, mix the crust ingredients together by hand. Press the mixture into the bottom of a 22 cm springform pan; set aside.

3.In a large bowl, combine cottage cheese and yogurt; beat until well mixed. Add eggs, one at a time, and beat until just incorporated. Add remaining ingredients; mix gently with a wooden spoon.

4.Pour the cheesecake mixture on top of the crust.

5.Bake for 30-40 minutes or until the mixture has set and a knife comes out clean when inserted.

6.Garnish with lemon zest.
